Ingredients
  

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 3 large eggs
  • 1 cup buttermilk
  • 1 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup strawberries puréed
  • 4 cups powdered sugar
  • 1/2 cup unsweetened cocoa powder for frosting
  • 1/2 cup heavy cream
  • 1 cup fresh strawberries sliced (for garnish)

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a large bowl, whisk together the dry ingredients: flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  4. In another bowl, combine the eggs, buttermilk, oil, and vanilla. Whisk until well blended.
  5. Gradually add the wet mixture to the dry ingredients, mixing until just combined.
  6. Fold in the strawberry purée gently.
  7. Divide the batter evenly between the prepared pans.
  8. Bake in the preheated oven for 30-35 minutes.
  9. Allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack.
  10. While the cakes cool, prepare the frosting by beating together the powdered sugar, cocoa powder, and heavy cream until fluffy.
  11. Place one cake layer on a serving plate and spread a layer of frosting on top.
  12. Top with the second layer and frost the top and sides of the cake.
  13. Garnish with fresh strawberry slices on top.
  14. Slice and serve to your loved ones!
