  • 1 cup dark brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup toffee bits
  • Coarse sea salt for topping

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, dark brown sugar, and granulated sugar until light and fluffy.
  3. Add in the eggs, one at a time, and then stir in the vanilla extract until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the toffee bits gently until they are evenly distributed.
  7. Scoop tablespoon-sized amounts of dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
  8. Sprinkle a pinch of coarse sea salt on top of each cookie before baking.
  9. Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.
  10. Remove from the oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
