Method
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter, dark brown sugar, and granulated sugar until light and fluffy.
- Add in the eggs, one at a time, and then stir in the vanilla extract until well combined.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the toffee bits gently until they are evenly distributed.
- Scoop tablespoon-sized amounts of dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
- Sprinkle a pinch of coarse sea salt on top of each cookie before baking.
- Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.
- Remove from the oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
