Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound Italian sausage casings removed
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 1 package 9 oz fresh cheese tortellini
  • 1 cup heavy cream
  • 2 cups fresh spinach roughly chopped
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Method
 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the Italian sausage, breaking it up with a spoon as it cooks.
  3. Stir in the diced onion and cook until translucent, about 3–4 minutes.
  4. Add the minced garlic and cook for an additional minute until fragrant.
  5. Pour in the chicken broth and bring the mixture to a simmer.
  6. Add the tortellini to the pot and cook according to package instructions, usually about 3–5 minutes.
  7. Stir in the heavy cream and mix well, letting it heat through.
  8. Add the chopped spinach and Italian seasoning, stirring until the spinach wilts.
