Ingredients
  

  • 1 ½ cups graham cracker crumbs
  • cup granulated sugar
  • cup unsalted butter melted
  • 1 package 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips
  • 1 cup cookie dough prepared or store-bought
  • 1 egg

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter until evenly mixed.
  3. Spread the crust mixture evenly in the bottom of the prepared dish and bake for 10 minutes until golden brown.
  4. In a mixing bowl, beat the softened cream cheese until smooth, then blend in the powdered sugar and vanilla extract.
  5. Add the egg and mix until just combined, being careful not to overbeat.
  6. Pour the cream cheese mixture over the baked graham cracker crust, smoothing it with a spatula.
  7. Dollop the cookie dough over the cheesecake layer and sprinkle chocolate chips on top.
  8. Bake for an additional 20 minutes until the cheesecake layer is set but still slightly jiggly in the center.

Notes

These bars can be prepared ahead of time and stored in the fridge for up to three days. Just be sure to keep them tightly covered to maintain freshness.
