  • 9 oz tortellini fresh or frozen
  • 2 cups fresh spinach
  • 8 oz mushrooms sliced
  • 1 large onion sliced thin
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Method
 

  1. Cook the tortellini according to package instructions.
  2. Sauté sliced onions in olive oil over medium heat until caramelized.
  3. Add sliced mushrooms and minced garlic to the pan with onions.
  4. Stir in fresh spinach until wilted.
