  • 1 cup Biscoff cookie butter
  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine Biscoff cookie butter, brown sugar, and granulated sugar until well blended.
  3. Add the egg and vanilla extract to the mixture, and blend well.
  4. In a separate bowl, whisk together the rolled oats, flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Drop spoonfuls of dough onto a lined baking sheet, spacing them about 2 inches apart.
  7. Bake in the preheated oven for 10-12 minutes, until the edges are lightly golden.
  8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
