Ingredients
  

  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/3 cup unsalted butter melted
  • 16 oz cream cheese softened
  • 1 cup powdered sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 2 teaspoons lemon zest
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
  3. Press the mixture into the bottom of a greased 9x9 inch baking dish and bake for 10 minutes.
  4. In a large bowl, beat the softened cream cheese until smooth, then slowly add the powdered sugar.
  5. Add eggs one at a time, mixing well before adding the next. Stir in lemon juice, zest, and vanilla extract.
  6. Pour the cream cheese mixture over the baked crust and smooth the surface with a spatula.
  7. Bake for an additional 20 minutes until the edges are set but the center slightly jiggles.
  8. Let the bars cool at room temperature, then refrigerate for at least 2 hours before slicing.
