Method
- Preheat the oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
- Press the mixture into the bottom of a greased 9x9 inch baking dish and bake for 10 minutes.
- In a large bowl, beat the softened cream cheese until smooth, then slowly add the powdered sugar.
- Add eggs one at a time, mixing well before adding the next. Stir in lemon juice, zest, and vanilla extract.
- Pour the cream cheese mixture over the baked crust and smooth the surface with a spatula.
- Bake for an additional 20 minutes until the edges are set but the center slightly jiggles.
- Let the bars cool at room temperature, then refrigerate for at least 2 hours before slicing.
Notes
Store leftovers in an airtight container in the fridge for up to 4 days. For an impressive presentation, dust with powdered sugar before serving.
