Deliciously Simple Italian Tortellini Pasta Salad

Ingredients
  

  • 12 ounces cheese tortellini
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup black olives sliced
  • 1/2 cup mozzarella balls halved
  • 1/4 cup fresh basil chopped
  • 1/3 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Method
 

  1. Cook the tortellini according to package instructions.
  2. Prepare the vegetables while the tortellini cooks.
  3. In a large mixing bowl, combine the cooked tortellini and prepared vegetables.
  4. Add the mozzarella balls and olives to the mixture.
  5. In a separate small bowl, whisk together olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
  6. Pour the dressing over the tortellini and vegetables.
  7. Add the chopped fresh basil and toss again gently.
  8. Refrigerate for at least 30 minutes before serving.
