Deliciously Spiced Holiday Fruitcake Cookies

Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon allspice
  • 1 cup mixed dried fruits raisins, cranberries, cherries
  • 1/2 cup chopped nuts walnuts or pecans

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar in a large mixing bowl.
  3. Add the eggs and vanilla extract to the creamed mixture, mixing until fully combined.
  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, ginger, and allspice.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the mixed dried fruits and nuts until evenly distributed.
  7. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes, or until golden brown around the edges.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.
