Add in the eggs and vanilla extract, mixing until fully incorporated.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually mix the dry ingredients into the wet mixture until just combined.
Roll the dough into tablespoon-sized balls and place them on a baking sheet lined with parchment paper.
Bake in the preheated oven for 10-12 minutes, until the edges are lightly golden.
Remove from the oven and immediately press a chocolate kiss into the center of each cookie.
Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
Once cooled, decorate with green and red sugar or sprinkles if desired.
