Method
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add in the eggs one at a time, mixing well after each addition, then stir in the vanilla.
- In a separate bowl, whisk together the flour and chopped dried cranberries.
- Slowly add the dry ingredients to the butter mixture, stirring just until combined.
- Spread the batter evenly in a greased 9x13 inch baking pan.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let the bars cool completely in the pan on a wire rack.
- While the bars cool, prepare the cream cheese frosting by beating together the softened cream cheese and powdered sugar until smooth.
- Once the bars are cool, spread the frosting evenly on top, then top with white chocolate chips.
- Refrigerate for at least 30 minutes to set the frosting.
- Slice into bars and serve at gatherings or holiday parties.
Notes
For optimal flavor, allow the bars to chill before serving; they can be made a day in advance. These bars store well in an airtight container at room temperature for up to three days.
