Ingredients
  

  • 1 cup unsalted butter softened
  • 2 cups all-purpose flour
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups dried cranberries chopped
  • 1 cup powdered sugar
  • 8 oz cream cheese softened
  • 1/2 cup white chocolate chips

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add in the eggs one at a time, mixing well after each addition, then stir in the vanilla.
  4. In a separate bowl, whisk together the flour and chopped dried cranberries.
  5. Slowly add the dry ingredients to the butter mixture, stirring just until combined.
  6. Spread the batter evenly in a greased 9x13 inch baking pan.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Let the bars cool completely in the pan on a wire rack.
  9. While the bars cool, prepare the cream cheese frosting by beating together the softened cream cheese and powdered sugar until smooth.
  10. Once the bars are cool, spread the frosting evenly on top, then top with white chocolate chips.
  11. Refrigerate for at least 30 minutes to set the frosting.
  12. Slice into bars and serve at gatherings or holiday parties.
