Delightful Fluffernutter Cookies for Every Occasion

Ingredients
  

  • 1 cup peanut butter
  • 1/2 cup unsalted butter softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup mini marshmallows

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, beat together the peanut butter, softened butter, brown sugar, and granulated sugar until the mixture is creamy.
  3. Add the egg and vanilla extract to the mixture, and continue mixing until well incorporated.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  6. Fold in the mini marshmallows gently.
  7. Scoop tablespoon-sized portions of the dough onto a lined baking sheet, spacing them about 2 inches apart.
  8. Bake the cookies for about 10-12 minutes, or until the edges are lightly golden.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
