In a large bowl, cream together softened butter and brown sugar until light and fluffy.
Add in the honey and eggs, mixing until well combined.
In a separate bowl, whisk together the flour, ground ginger, cinnamon, cloves, and lemon zest.
Gradually add the dry mixture to the wet ingredients, stirring until just combined.
Fold in the chopped nuts gently with a spatula.
Scoop tablespoon-sized balls of dough onto a lined baking sheet.
Bake for 12-15 minutes or until edges are golden.
Remove from the oven and let cool on the sheet for a few minutes before transferring to a wire rack.
Once cooled, decorate with icing if desired.
