Ingredients
  

  • 2 and 1/2 cups all-purpose flour
  • 1 and 1/2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1 tablespoon red food coloring
  • 1 cup cream cheese softened
  • 4 cups powdered sugar
  • 1/4 cup unsalted butter softened
  • 1 teaspoon vanilla extract for frosting

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a large bowl, mix together all dry ingredients.
  4. In another bowl, whisk together the wet ingredients.
  5. Gradually add the wet mixture to the dry mixture.
  6. Add the red food coloring until desired color is achieved.
  7. Pour the batter evenly into the prepared pans.
  8. Bake for 25-30 minutes, or until a toothpick comes out clean.
  9. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks.
  10. Prepare the cream cheese frosting by beating the cream cheese and butter until creamy.
  11. Gradually add powdered sugar and vanilla extract, mixing until smooth.
  12. Frost the cooled cake layers and decorate as desired.
