Ingredients
  

  • 1 cup pumpkin puree
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 1 large egg
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup chocolate chips
  • 1 cup graham cracker crumbs

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar.
  3. Add in the pumpkin puree and egg, mixing well until smooth.
  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, and nutmeg.
  5. Gradually mix the dry ingredients into the wet ingredients.
  6. Fold in the chocolate chips and graham cracker crumbs.
  7. Using a cookie scoop, drop dough onto a lined baking sheet, leaving space between each cookie.
  8. Bake for 10-12 minutes, or until the edges are golden brown.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to wire racks.
