Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 16 ounces cream cheese softened
  • 1/2 cup powdered sugar
  • 1 tablespoon lemon juice
  • Extra sugar for topping

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, baking powder, and salt.
  3. In another bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the flour mixture to the wet ingredients, mixing until just combined.
  6. Press the dough into the bottom of a greased springform pan, creating an even layer.
  7. Bake the crust for 10-12 minutes or until lightly golden brown.
  8. While the crust bakes, beat the cream cheese in a large mixing bowl until smooth and creamy.
  9. Add in the powdered sugar, lemon juice, and remaining vanilla extract, mixing until fully combined.
  10. Pour the cheesecake filling over the pre-baked crust, smoothing the top with a spatula.
  11. Bake the cheesecake for an additional 30-35 minutes, or until the center is set but slightly jiggly.
  12. Turn off the oven and let the cheesecake cool with the door slightly ajar for 1 hour.
  13. After cooling, chill the cheesecake in the refrigerator for at least 4 hours or overnight.
  14. Once chilled, remove from the springform pan and top with your desired icing and extra sugar before serving.
