- In a large bowl, beat the softened cream cheese and powdered sugar until smooth.
- Add in the lemon juice and lemon zest, then mix to combine.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
- In serving glasses, layer the graham cracker crust, cheesecake filling, and blueberries.
- Repeat the layers until glasses are filled, finishing with a dollop of whipped cream and a few blueberries on top.
- Chill the parfaits in the refrigerator for at least 30 minutes before serving.
Notes
These parfaits can be made in advance and stored in the fridge for up to two days. Just add the fresh blueberries as garnish just before serving for maximum freshness.
