Cut the chicken thighs into bite-sized pieces and add them to the marinade. Ensure the chicken is evenly coated and let it marinate for at least 1 hour in the refrigerator, or overnight for best results.
While the chicken marinates, soak wooden skewers in water for at least 30 minutes to prevent burning during grilling.
Preheat the grill to medium-high heat, ensuring the grates are clean and well-oiled to prevent sticking.
Thread the marinated chicken pieces onto the soaked skewers, alternating with pieces of peach if desired.
Place the skewers on the grill, closing the lid. Grill for about 10-12 minutes, turning occasionally until chicken is fully cooked and has nice grill marks.
