Ingredients
  

  • 1 pound chicken breast cubed
  • 12 ounces pasta such as penne or fettuccine
  • 4 cloves garlic minced
  • 1 lemon juiced and zested
  • 2 cups chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add cubed chicken breast to the pot and season with salt and pepper.
  3. Sauté the chicken for about 5-7 minutes until browned and cooked through; remove and set aside.
  4. In the same pot, add minced garlic and sauté for 1 minute until fragrant.
  5. Add chicken broth, lemon juice, lemon zest, and dried oregano; bring to a boil.
  6. Stir in the pasta and return the cooked chicken to the pot.
  7. Reduce heat to a simmer, cover, and cook for about 10-12 minutes until pasta is al dente.
  8. Taste and adjust seasoning with salt and pepper as needed.
  9. Serve warm, garnished with Parmesan cheese if desired.
